Chili Crisp Mac N Cheese Bites

  •  Tbsp cornstarch
  • 1/2 tsp dry mustard
  • 1.5 tsp salt
  • 2 tsp pepper
  • 2.5 cups whole milk
  • 2 Tbsp butter
  • 2 Tbsp Mr Bing Chili Crisp
  • 1.5 cups Monterey Jack, freshly shredded
  • 1.5 cups yellow sharp cheddar, freshly shredded
  • 2 cups macaroni elbows, al dente


  1. Preheat oven to 375º.
  2. Bring a pot of salted water to boil. Cook pasta according to package instructions. Strain then set aside.
  3. Grease a baking dish, add cooked pasta, then set aside.
  4. In a saucepan, combine cornstarch, dry mustard, salt, and pepper.
  5. Turn burner to medium heat, then add milk to pan and whisk until well combined. Continue whisking until milk begins to lightly bubble and thicken. Whisking continuously, add butter until well combined. Stir in Mr Bing Chili Crisp. Then add cheese slowly while still whisking.
  6. Once cheese is fully melted, set heat to low and stir occasionally in order to keep cheese sauce from solidifying.
  7. Spray a mini muffin pan with cooking oil. Scoop mac n cheese into each pocket (fill to top?).
  8. Bake for 20-25 minutes or until top is lightly browned and bubbling and sides lightly browned. Remove from oven and let set for at least 10 minutes. Repeat with remaining mac n cheese.
