Salmon Sushi Bake

Ingredients
1 1/2 lbs of salmon skin on (or 4 cutlets)
1/2 cup Chobani Nonfat Greek Yogurt
Mr Bing Thai Chili Sriracha (adjust to your spice level)
3 Green Onion, white & green parts separated
2 cups, cooked sushi rice
Salt
Paprika
Garlic powder
Red pepper flakes
Olive oil
Sesame seeds
1 Avocado
1 Cucumber
Directions
Cook your rice according to instructions, and then transfer to a glass Pyrex dish in an even layer. Preheat oven to 400 degrees. Combine salt paprika, garlic powder, red pepper flakes and olive oil. Rub on the salmon and bake for 20-30 mins depending on size of salmon. Keep your oven on 400 after salmon is finished baking you will need it for the final dish.
While your salmon is baking, cut up your avocado, cucumber, and green onion. Once the salmon is finished baking remove skin if any, and smash with a fork. Add Mr Bing Sriracha and Greek yogurt, mix well. Scoop out the salmon mix onto the sushi rice (should already by in a glass dish), and spread into an even layer. Top with more sriracha and sesame seeds. Bake for 10 mins at 400 degrees. About half way through add the whites of the green onions on top.
Set your oven to broil, high and continue to bake for 5 additional minutes for crispy edges.
Add to a bowl with the cucumber, avocado, and green onion. Top with additional sriracha if you like. Enjoy
