Manicotti all'Arrabbiata

Ingredients

Mr Bing Arrabiata Sauce

  • ¼ cup olive oil
  • 1 onion, diced
  • 1 head garlic, minced
  • 28 oz can San Marzano
  • 15 oz can tomato sauce
  • 6 oz tomato paste
  • 2 Tbsp Mr Bing Chili Crisp
  • 3 Tbsp Mr Bing Sriracha
  • 2 tsp fish sauce
  • 1 Tbsp dried basil
  • 1 Tbsp dried oregano
  • Salt, to taste
  • Pepper, to taste

Manicotti alla Arrabiata

  • 8 oz manicotti pasta
  • 15 oz whole milk ricotta
  • 1 cup Parmesan cheese, freshly grated + divided
  • 16 oz low-moisture mozzarella, freshly grated + divided
  • 1 egg
  • 1 Tbsp dried oregano
  • 1 Tbsp dried basil
  • 1 tsp dried parsley
  • 1 Tbsp garlic powder
  • Salt, to taste
  • Pepper, to taste
  • Mr Bing Arrabiata Sauce

Directions

Mr Bing Arrabiata Sauce

  1. Heat oil in pan over medium-high heat. Add onion and sauté until tender. Add garlic and cook until fragrant, about 1 minute.
  2. Stir in San Marzano tomatoes and crush them with stirring spoon. Stir in tomato sauce, tomato paste, Chili Crisp, Sriracha,  basil, oregano, salt, and pepper.
  3. Bring to a heavy simmer and cook for 15-20 minutes, or until flavors are well-integrated.
  4. Remove from heat and transfer to a large bowl.
  5. Using an immersion blender, blend sauce until smooth.
  6. Set aside.

Manicotti alla Arrabiata

  1. Preheat oven to 350ºF.
  2. Bring a pot of water to boil.
  3. Cook pasta for about half the suggested time on the box. Remove from water and strain. Set aside.
  4. In a large bowl, add ricotta, 1/2 of Parmesan, 1/2 of mozzarella, egg, oregano, basil, parsley, and garlic powder. Mix until well-combined.
  5. Cover the bottom of a 13x9” pan with a thin layer of Arrabiata Sauce. 
  6. Using a spoon or piping bag, stuff manicotti shells with ricotta mixture. Arrange them in a single row in 13x9” pan.
  7. Cover them with sauce while leaving both ends of each manicotti tube slightly exposed.
  8. Top sauce with remaining half of Parmesan and mozzarella.
  9. Cover pan with foil and bake for 40 minutes.
  10. Raise oven temp to 375º. Uncover and bake for an additional 15-20 minutes or until cheese on top is bubbling and golden.
  11. Remove from oven and let set for at least 5 minutes.
  12. Garnish with Mr Bing Chili Crisp. Serve immediately.
